When I make this recipe, I like to peel and cube my potatoes, though you can personalise it as you wish. To season, I like adding salt, garlic granules and rosemary olive oil. If I don’t have rosemary olive oil, I alternatively use regular olive oil and add some Italian herbs to the dish instead. I also like to add some butter – it helps the potatoes roast nice and crispy. 

Possible ingredients to add to these roast poatoes:

  • You could add some chilli flakes to the potatoes if you prefer it a bit spicy

  • You could add some extra paprika to the potatoes for extra taste

What to serve with these roast potatoes:

This roast potato dish is so versatile – it can be served with various mains, such as lamb, roast chicken, steak, vegetables and so much more!

Hints and Tips:

  • If you have time, you can place the cubed potatoes in a bowl with water for an hour before you coat it with the seasoning. This will allow some of the starch to be released, making the potatoes crispier.

  • Before you add the seasoning to the potatoes, you could dry the potato off to remove as much excess water from the potatoes as possible. This will help make the roast potatoes crispier.

  • You can parboil the potatoes, then drain in a colander and rough up the edges to make extra crispy.

  • If you are short for time, you can make “Cheats roast potatoes”. Instead of putting the potatoes in the oven, you can quickly fry up in frying pan to brown the parboiled potatoes for about 10 minutes.

  • 1 tsp salt

  • 3 tsp garlic granules

  • 2-3 tbsp rosemary olive oil

  • 3 medium potatoes

  • 1tsp butter

  • (optional) 1 tsp chilli flakes


  • Preheat oven at 200 degrees Celsius
  • Peel potatoes
  • Chop potatoes into smaller cubes (around 3-4cm) and place in bowl
  • Pat dry the potato cubes to remove excess water
  • Add salt, garlic granules and rosemary olive oil and butter to bowl and mix thoroughly
  • Place potatoes onto tray and roast for 30 min at 200 degrees Celsius
