Korean Braised Chicken Stew

What is this Korean spicy chicken dish?

This is a very simple, one-pot Korean spicy braised chicken recipe. It’s one of the easiest dishes to make but tastes so delicious! Also known as Dak-dori-tang, this Korean chicken potato stew uses minimal ingredients that are essentially just thrown in the pot for 40 minutes.

How to make this spicy Korean chicken:

The main ingredients to make this spicy Korean chicken stew is the Korean pepper paste and the Korean chilli pepper powder. These are both ingredients you can find in an Asian supermarket. If you don’t have one easily accessible, you can find them on Amazon too. 

Other ingredients needed are chicken, potatoes, onions, garlic, light soy sauce and sugar. To make this dish, you’re essentially just throwing in all the ingredients into a pot and letting it simmer for 40 minutes. I can’t emphasise how easy it is to make!

You can easily add other vegetables to this Korean chicken stew, such as 

  • Carrots
  • Mushrooms
  • Cabbage
  • Chinese Leaf

These extra ingredients are optional but not necessary. Adding extra vegetables will release more water into the stew. This dish can also be made using other meats, such as beef or pork. 

How to make the spicy Korean chicken sauce:

The ingredients to make the spicy Korean chicken sauce is sugar, light soy sauce, garlic, Korean chilli powder and Korean pepper paste. You can add more or less Korean Pepper Paste to the sauce depending on your spice preferences.

This is such an easy dish to make! You essentially just need to throw in all the ingredients in a pot and let it simmer for 40 minutes. It’s so simple and perfect when you’re busy or short on time! It doesn’t even require any extra vegetable oil or water to make the stew!

You can easily just serve this one-pot chicken stew on its own, however, it also works well with a bowl of plain white rice and some side vegetables, such as garlic sautéed spinach.

How to store this Korean chicken potato stew/Can you freeze this chicken potato stew?

You can easily freeze this Korean braised chicken once it’s cooked. To reheat, simply pour all the ingredients in a pot for 5-10 minutes. You may want to add some extra water to make some extra sauce. To refrigerate, place the Korean chicken stew in an airtight container!

Hints and Tips:

  • You don’t need to add any extra vegetable oil or water to the bowl. As the stew cooks, it will naturally release water from the ingredients. 

  • I would recommend stirring the dish after 20 minutes before leaving it to simmer for a further 20 minutes. This will spread the delicious seasoning over all the ingredients.

Ingredients

  • 2 large potatoes

  • 600-700g chicken

  • 2 large onions

  • 5 garlic cloves

  • 1 heap tbsp chilli pepper powder

  • 1 heap tbsp korean pepper paste

  • 2 heap tbsp sugar

  • 3 tbsp soy sauce

Instructions

  • Preparation
  • Mince the garlic
  • Cut the onions into small cubes
  • Peel and cut the potatoes into 3cm pieces
  • In a separate bowl, mix the garlic, sugar, soy sauce Korean pepper paste and Korean chilli pepper powder
  • Cooking
  • At medium heat, place the chicken on the bottom of the pan.
  • Add the onions and potatoes
  • Add the seasoning mixture
  • Place the lid on the pot and let the dish simmer for 20 minutes.
  • After 20 minutes, stir the stew.
  • Place the lid back on the pot and let the dish simmer for a further 20 minutes.
  • Mix well, ready to serve. Enjoy 🙂
