This is a super easy, spicy Indian Kachumber Salad recipe! It’s such a tasty salad to make and serves as a great appetiser.

Kachumber salad is a popular Indian salad that mainly consists of tomatoes, cucumbers and lemon juice. To make this salad, you just simply chop up all the ingredients and throw them together! It takes less than 20 minutes to make and is one of the best crowd-pleasing salads I’ve ever made!

Ingredients Needed To Make This Cucumber And Peanut Salad

To make this spicy cucumber salad, the ingredients you need are:

  • Cucumber
  • Carrots
  • Cherry tomatoes
  • Sweetcorn
  • Red onion
  • Roasted peanuts
  • Bombay mix or Bhel Puri
  • Coriander
  • Salt
  • Sugar
  • Lemon

Alternative Ingredients

There are loads of alternative ingredients and add-ons to make this cucumber and peanut salad recipe.

Vegetables — I usually stick to using just cucumber, carrots, tomatoes and sweet corn in this salad. If you want to add more vegetables, you could try adding red radish, bell peppers or celery to the salad.

Nuts and seeds — I like to use roasted peanuts in this salad. There are other nuts or seeds you can use instead, such as cashews, pistachios, almonds, chia seeds or pumpkin seeds.

Herbs — I’ve always used coriander in this cucumber salad. If you don’t have coriander, using parsley is an alternative, though I have never tried it myself. 

SpicesTo make this salad spicy, I like to use either Bombay Mix of Bhel Puri. I usually use Bombay Mix because it’s more easily available but using Bhel Puri adds a great spice to the salad. If you prefer more spice or can’t get either Bombay Mix or Bhel Puri, you could alternatively use spicy paprika powder or chilli flakes.

How To Store This Cucumber Salad:

To store this salad, simply cover it with cling film or place it in an airtight container before storing it in the fridge for no more than two days. However, Kachumber salad is best served fresh. 

Hints And Tips To Make The Perfect Indian Kachumber Salad

  • If you’re planning on making the salad to bring to a dinner party, don’t add the peanuts and Bombay mix/Bhel Puri to the salad until you arrive. This will stop them getting soggy before it gets served. 

  • When combining all the ingredients, add the red onions to the bottom of the bowl before adding the other ingredients. When you add the lemon juice, it will filter through to the bottom of the bowl, making the red onions less pungent and sharp.

Ingredients

  • 300g cucumber

  • 2 carrots

  • 150g cherry tomatoes

  • 100g sweetcorn

  • 1 small red onion

  • 100g roasted peanuts

  • 40g bombay mix or bhel puri

  • 15g coriander

  • 1 tsp salt

  • 2 tbsp sugar

  • 1 lemon

Instructions

  • Cube the cucumber and grate the carrots. Cut the cherry tomatoes in half and finely chop the red onions and coriander.
  • Add red onions, cucumber, carrots, sweetcorn, cherry tomatoes, coriander, salt and sugar to a bowl.
  • Squeeze the lemon juice over the salad.
  • Mix the salad well.
  • Add the roasted peanuts and Bombay Mix/Behl Puri to the salad.
  • Mix this again, ready to serve. Enjoy 🙂
